When our boys were little, they played competitive lacrosse in Charlotte and we often traveled to games. One weekend they played in Gettysburg, PA. While we were there, we visited a wonderful Amish market where this delicious baked oatmeal was being sold. We loved it! At that time, the internet was new but I was able to find this recipe. It was one of the first recipes I ever found on the internet.
Because it’s flourless, it is gluten-free. Quick oats make it sliceable to eat in your hand. Old-fashioned oats make it more crumbly so you can serve it in a bowl with fruit. Feel free to leave out the nuts if you’re allergic.
At Jubilee Suites we serve it with our other breakfast breads and encourage our guests to add Greek yogurt, raisins or fresh berries and honey.
This recipe makes two 9″ x 13″ pans. Try it! It’s different and delicious.
Baked Oatmeal Recipe
Ingredients:
1 cup avocado oil
2 t. salt
1-1/2 c. brown sugar
4 t. baking powder
4 eggs
2 t. cinnamon
1/2 t. nutmeg
5 c. regular old-fashioned oats
1/2 cup chopped pecans or walnuts (optional)
2 c. oat milk
Directions:
Preheat oven to 350 degrees.
Prepare two 9″ x 13″ pans by spraying with Pam.
Mix all ingredients except milk in mixer with paddle. Add milk last and combine.
Pour mixture into prepared pans.
Bake at 350 for 30-40 minutes or until firm to the touch and golden brown.
Cut into squares to serve. Add accompaniments- Greek yogurt, berries or raisins- if desired.
Freezes well.
